The raw, chaotic variety of the ingredients transforms into harmony, united under the comforting warmth of the oven, the sharp sizzle of the pan, and the aromatic whispers of the spices. The secret behind any great recipe always lies in the ingredients. When it comes to chicken, it goes without saying that the quality of the bird itself plays a major role. I prefer using organically raised free-range chicken. Marianne and I discovered a local organic poultry farm a few years ago and we were sold on the superior flavor and texture of their chicken. Unsurprisingly, good quality, flavorful ingredients yield good quality, flavorful dishes. When it comes to spices, I like to create a blend from scratch. The spices I prefer are paprika, garlic powder, onion powder, thyme, oregano, rosemary, turmeric, and a dash of chili flakes. All these spices work together harmoniously, each contributing its own unique punch to the overall flavor of the chicken.
As a storyteller, I do love a good romance. In the culinary world, the best love story I know is between the chicken and its marinade. Giving the chicken ample time to mingle with the marinade allows the flavors to penetrate deeply into the meat. I usually marinade my chicken overnight, letting the rich flavors of the herb-spice blend imbue the meat. The resulting chicken pieces taste of much more than just the surface seasoning. Both methods impart a deep, sumptuous flavor which elevates the taste of the spices while maintaining the succulence of the chicken. Grilling gives a crispy skin which, when bitten into, reveals juicy, tender chicken flesh underneath that is simply unforgettable. Alternatively, roasting caramelizes the marinade on the chicken, creating a sweet and savory crust that contrasts delightfully with the juicy insides.
Now that we have our well-marinated, perfectly cooked chicken ready, it is time to gussy it up. Serving it on a platter garnished with fresh rosemary sprigs and lemon slices is one way to wow your guests. I personally like to pair the chicken with my signature garlic-herb roasted potatoes. Roasting the potatoes along with the chicken allows them to soak up the delicious chicken juices and becomes a divine accompaniment to the chicken itself.
You might think that we've already reached the zenith of flavor with all our steps so far. Not so fast. There is still another level to ascend. I am talking gravy, my friends. I usually make mine with the chicken drippings left in the pan after roasting, mixed in with some cream and more of the spices from the marinade.
